GAZPACHO GARDEN SALAD | |
1/2 c. vegetable oil 1/3 c. real lemon 2 cloves garlic, finely chopped 1 1/2 tsp. salt 1/4 tsp. pepper 1 med. green pepper, diced 2 med. firm tomatoes, diced 1 med. firm cucumber, peeled & diced 1/2 c. sliced green onion In 1 pint jar with tight fitting lid, combine oil, real lemon, garlic, salt and pepper; shake well. In narrow 1 quart glass container, layer 1/2 each of the green pepper, tomatoes, cucumber and onions; repeat. Pour dressing over salad. Chill 4 hours to blend flavors. |
