CAPIROTADA (BREAD PUDDING) 
1 loaf white bread
2 1/2 c. panocha or brown sugar
1/2 lb. cheddar cheese, grated
3/4 c. butter
1 c. raisins
1 stick cinnamon or 2 tbsp. ground cinnamon
Pinch of cloves
1 med. onion, chopped
1 tbsp. fresh cilantro, chopped
3-4 c. water

Make a syrup about the consistency of maple syrup with the following: fry onion in butter. Do not brown. Crush the panocha and cinnamon, then add to the onions. Add about 3 to 4 cups of water to this and boil until panocha is dissolved. Add cilantro and cloves. Boil 5 minutes more.

Brown bread on both sides in the oven. Into a deep buttered dish, arrange a layer of toasted bread and a layer of raisins and cheese. Repeat then pour the syrup mentioned above. Bake in slow oven 350 degrees for 1 hour or until firm and well done. Serve hot. Sliced bananas and chopped nuts may be added to the cheese and raisins.
