ICEBERG TOMATO PICKLE 
7 lbs. green tomatoes, sliced thin
2 c. pickling lime
5 lbs. sugar
3 pts. vinegar
1 tsp. ginger (ground)
1 tsp. cloves (ground)
1 tsp. allspice
1 tsp. celery seed
1 tsp. mace
1 tsp. cinnamon

Mix 2 cups pickling lime in 2 gallons boiling water. Soak slices in lime water 24 hours. Drain and soak for 4 hours in fresh water, changing the water every hour. Drain.

Make syrup of vinegar, sugar and spices. Bring to a boil and pour over tomatoes. Let stand overnight.

Next day, boil for 1 hour and seal in sterilized jars.

(Note: If lime sticks to tomatoes, wash off gently before processing.)
