GREEN TOMATO OR CUCUMBER PICKLE 
2 c. slack lime
5 lb. sugar
1/2 gallon vinegar
1 to 2 tbsp. pickling spice
8 lbs. green tomatoes or cucumbers
Water for soaking

Wash and slice tomatoes or cucumbers. Soak in deep crock with lime and enough water to cover. Allow to soak for 24 hours.

Next day, rinse vegetables 4 times in water or until all the lime is gone. Mix sugar, vinegar and spice in a large pot. Dissolve sugar thoroughly. Add tomatoes or cucumbers. Cook slowly for 1 hour. Place in sterilized jars and seal.
