SMOKED SALMON & FETA SCRAMBLE 
5 large eggs
2 oz. Cajun smoked salmon, crumbled
1 oz. (about 3 tbsp.) finely diced onion
3 tbsp. water
chopped tomatoes (for garnish)
chopped fresh parsley (for garnish)
1 tbls feta cheese crumbles (for garnish)
salt and pepper, to taste

Quick, easy and yummy!

Combine 5 eggs, water, crumbled salmon and crumbled onions in a bowl and mix thoroughly with a spoon. Spray a non-stick pan with cooking spray (or use butter if you choose). Put in Medium High heat until oil starts to form bubbles. Pour mixture into pan and stir constantly to scramble - about 4 minutes.

Once all the egg is firm and fully cooked, divide onto two plates; immediately garnish with 1/2 tablespoon of feta and the chopped parsley. Serve immediately.

This is something we came up with recently and it's now become a light, low calorie low fat breakfast, lunch or dinner for us.

If you can't source Cajun smoked salmon, any smoked salmon would work. But you may wish to add a dash of pepper flakes to give it a little "zing".
