CHINESE PEPPER STEAK 
2 lbs. steak, cut in strips (sirloin is best)
2 c. beef broth, canned or made with bouillon
1 onion, chopped
1 green pepper, chopped
1 can Chinese mixed vegetables
1/3 c. soy sauce
1/3 c. water
2 tbsp. cornstarch
1 c. rice
2 tbsp. butter
Salt and pepper

Prepare rice according to package directions. Brown steak in butter. Drain butter off when brown. Season to taste. Add beef broth. Simmer 10 minutes. Add onion, pepper and vegetables. Simmer until peppers are tender. Add water, soy sauce and cornstarch. Stir until thickened! Serve over rice. Serves 6.
