BESSIE PARVE'S APPLE CAKE 
2 cups sugar
3 cups flour
4 tbsp. baking powder
4 eggs
1 cup vegetable oil
1/2 cup orange juice
2 1/2 tsp. vanilla
5 or 6 apples, peeled and cubed (1/2-inch)

Mix sugar and apples; set aside.

Combine all other ingredients, pour 1/2 of the batter into a greased 10-inch angel food tube pan. Spread 1/2 of the apple mixture with sugar and cinnamon. Pour in remaining cake batter. For topping, combine 3 tablespoons of sugar with 1 teaspoon of cinnamon and stir with remaining apples. Arrange the second half of sugared apples over the top of the batter.

Bake in a preheated 350°F oven for 1 hour and 15 minutes, or until cake springs back when touched lightly in center with fingertips or a toothpick inserted in center comes out clean.
