CARROT - CAULIFLOWER SALAD 
2 tbsp. extra virgin olive oil
1 tbsp. fresh lemon juice
1 tsp. dried mint
1/2 tsp. minced garlic
1/2 tsp. salt
1/4 tsp. freshly ground pepper
3 carrots, sliced thin diagonally
4 c. sliced cauliflower flowerettes
2 green onions, chopped

Whisk first 6 ingredients in bowl until blended; set aside. Place carrots in steamer rack in saucepan over simmering water; steam until tender, 4 minutes. Add to bowl with dressing; toss to coat. Steam cauliflower until tender, 3 minutes; add to bowl. Cool, then stir in green onions.
