SUPER EASY MICROWAVE RASPBERRY

2 (10 oz.) pkgs. frozen raspberries
2 1/2 c. sugar
1 tbsp. lemon juice
3 tbsp. plus 1 1/2 tsp. liquid pectin

Place frozen raspberries in 2 quart casserole, microwave at High (100%) until thawed, 4 to 6 minutes. Stir in sugar and lemon juice. Microwave at High (100%) until mixture boils, 8 to 10 minutes, stirring after half the cooking time. Blend in liquid pectin.

Microwave at High (100%) until mixture comes to a rolling boil, 3 to 4 minutes. Microwave at High (100%) to continue boiling, 1 minute. Pour into prepared jars, seal and refrigerate.

Since microwave ovens vary in power, you may need to adjust your cooking time.
