BEEF NOODLE BAKE 
2 tbsp. extra virgin olive oil
1 lb. lean ground beef
3 cloves garlic, minced
1/2 tsp. sea salt
pinch of pepper
2 cans (8 oz) tomato sauce
1/2 lb. fettuccine noodles
1 bunch (about 1/2 cup) scallions, with green top, chopped
1 pkg. (3 oz.) cream cheese
1 cup dairy sour cream
1/2 cup grated Parmesan or Asiago cheese

Heat oil in a large skillet. Add ground beef and cook, stirring with a fork, until meat is broken up and has lost its red color. Add garlic, salt, pepper and tomato sauce. Cover and simmer 20 minutes, stirring occasionally. Cook noodles and drain thoroughly.

Preheat oven to 350°F.

Combine scallions, cream cheese and sour cream. Put 1/3 of the noodles in the bottom of a large buttered casserole, spread with 1/3 of the sour cream mixture and cover with 1/3 of the meat sauce.

Repeat layering until all ingredients are used. Sprinkle top of casserole with cheese.

Bake casserole 30 to 40 minutes, or until very hot and bubbly.

Makes 6 servings.

This was a good recipe. We tried it using whole wheat noodles. I would suggest mixing all the ingredients together then cover it all with cheese and bake. I also substituted plain yogurt for the sour cream just because I didn't have any on hand. I also made iron skillet corn bread to go with it. A definite comfort food in my opinion we will definitely have it again.

This is (literally) the best thing I ever made. I tweaked it a little and added feta cheese along with the sour cream and cream cheese. I also mixed in a large amount of pesto in the layers.

I had some left over pasta from another recipe. I put mushrooms into the meat sauce and some leaf spinach. Just to add additional flavor. Really good comfort food.

Comfort food at its best! I added 1 green pepper to the meat mixture and used single cream instead of sour cream. It was delicious!
