FISH WITH BROCCOLI & CHEESE
SAUCE
 
2 tbsp. butter
2 tbsp. flour
1 tsp. instant chicken bouillon
Dash of ground nutmeg
1 c. milk
2/3 c. shredded cheddar
10 oz. frozen chopped broccoli, defrosted & drained
1 tbsp. lemon juice
1 lb. fresh or frozen defrosted fillets
1/2 tsp. salt

Step 1: Place butter in 4 cup measuring cup. Microwave uncovered on high until melted. Stir in flour, bouillon and nutmeg; stir in milk. Microwave uncovered stirring every 60 seconds until sauce is thickened, approximately 3 to 4 minutes. Stir in cheese.

Step 2: Spread broccoli in baking dish, 8 x 8 x 2 inches in size. Sprinkle with lemon juice. Arrange fish on broccoli. Sprinkle with salt. Spread sauce over fish and broccoli. Cover with waxed paper. Microwave on high 4 minutes; rotate baking dish 1/2 turn. Microwave until fish flakes easily with fork, 3 to 5 minutes longer. Let stand 3 minutes. Serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.
