SZECHUAN GREEN BEANS 
6 cloves garlic, smashed and peeled
2 quarter-size slices fresh ginger, peeled
2 scallions, trimmed and cut into 2 inch lengths
1 tbsp. vegetable oil
1 tsp. hot red pepper flakes
1 tbsp. soy sauce
1 tbsp. rice wine vinegar (red wine okay)
1 lb. green beans, tipped and tailed

Place ginger, garlic and scallions in bowl of food processor. Process until finely chopped. Remove to 14 x 11 x 2 inch dish. Add oil and pepper flakes. Cook, uncovered, on High, for 3 minutes. Stir in remaining ingredients. Cook, uncovered, on High for 15 minutes, stirring several times. Serve hot or cold.
