GREEN BEANS INDIAN STYLE 
1 1/2 tsp. vegetable oil
1 tsp. mustard seeds
1 lb. fresh green beans, trim and cut diagonally 1 inch pieces
2 med. carrots, peel and slice
1 sm. onion, chopped fine
1 tsp. salt (or to taste)
1 tsp. ground coriander
1/8 tsp. ground ginger
2 tbsp. fresh lemon juice

In large non stick saute pan, heat oil on medium high heat. Add mustard seeds and saute until they start to pop. Stir in beans, carrots and onions and stir and cook 5 minutes. Stir in salt, coriander and ginger. Reduce to low, cover and cook stirring often for 8 to 10 minutes or until beans are tender crisp. Stir in lemon juice and serve.

Pleasant change. Hubby wants it made again. The seasonings were barely noticeable. Next time: I'm adding 1/8 tsp dry mustard, increasing the coriander by 1/4 tsp and the ginger by a pinch. I added 1/8 c. water for the last 8 min. cooking, as the pan was dry. Although it caused more dishes to wash, prior to putting in the beans and carrots, I steamed them for 4 minutes.
