SPICY HAM AND EGG CASSEROLE 
8 slices white bread (not too fresh)
1/2 c. butter
2 c. sharp cheddar cheese, grated
4 oz. can green chiles, diced
1/2 c. green onions, sliced
8 slices cooked Canadian bacon, shredded
8 eggs, beaten
2 1/2 c. milk
1 c. Half & Half
1/2 tsp. salt
Cayenne pepper
Dry mustard to taste

Trim crusts off bread. Butter bread on both sides and cut into cubes. Place bread cubes in a greased 9 x 13 inch casserole dish and sprinkle cheese, chiles, green onions and bacon over the top. Beat eggs, milk and Half & Half together with spices. Pour over mixture in casserole. Refrigerate overnight. Bake uncovered for 45 minutes at 325 degrees. Serves 6 to 8.
