SPICY EGG CASSEROLE | |
6 eggs 1/2 c. flour 1 c. milk 3 oz. cream cheese, cubed 8 oz. sm. curd cottage cheese 10 oz. Monterey Jack cheese, grated 6 oz. med. Cheddar, grated 1 tsp. baking powder 1 lb. hot sausage, cooked, crumbled and drained 1/8 tsp. salt 1 bunch green onion, chopped 1 (4 oz.) jar sliced mushrooms, drained 1 (4 oz.) chopped green chiles, drained 6 tbsp. butter Paprika Beat eggs well with a wire whisk. Add flour, baking powder and milk. Add cream cheese and cottage cheese to the egg mixture. Add the grated cheeses, sausage, salt, onion, mushrooms and chiles. Pour mixture into a buttered 9x13 inch casserole. Dot with butter and top with paprika. Cover and refrigerate overnight. Bring to room temperature and bake at 350 degrees for 45 minutes. |
