CHRISTMAS JELLO SALAD 
2 pkgs. Jello, 1 lime, 1 strawberry
2 c. pineapple juice
1 med. sized can crushed pineapple
1 (3 oz.) pkg. cream cheese
1/2 c. sugar
1 pt. whipping cream

Dissolve jello in hot pineapple juice, using 1 cup hot juice for each package jello. Use separate dishes. Chill until cold and syrupy. Whip each with egg beater until fluffy and add the softened cream cheese to the lime jello and the pineapple to the strawberry jello. Then fold in the sweetened whipped cream, using the 1/2 cup sugar. Put half the cream in each mixture. Pour the red mixture in a mold and cover with the green mixture. Chill.

Before using the crushed pineapple, drain it well. Use this liquid for dissolving jello. If not enough, either add canned pineapple juice or water to make the amount needed.

Variations: Different flavors of gelatin may be substituted. Chopped nuts may be added.
