BAKED CHICKEN AND RICE 
2 c. uncooked Minute Rice
1 pkg. dry Lipton onion soup mix
1 tbsp. dry parsley
1 c. water
Enough chicken parts to make one layer in 13 x 9 inch baking dish
1 can cream of mushroom soup, mixed with 1 1/2 c. water or chicken broth

In 13 x 9 inch baking dish, spread 2 cups Minute Rice. Sprinkle soup mix and 1 tablespoon dry parsley over rice. Pour 1 cup water over rice, onion and parsley Arrange chicken parts on rice and onion. Mix 1 can cream of mushroom soup with 1 1/2 cups water or 1 1/2 cups chicken broth and pour mixture over chicken. Bake at 350 degrees uncovered about 1 hour.

It's off on water. I added 1 1/2 cups. It needs more. Probably 2 or 2 1/4 cups. I made 2 identical batches. One was slightly more dry than the other. I cooked on the middle rack of an electric oven.

Made this tonight,and it was delicious. The rice was a bit hard in spots, so I may need to add more water next time.
