8 slices bacon or other - fry
4 green onions, sliced thin - saute
8 eggs
2 1/2 c. grated Jack cheese
1 c. milk
1/2 tsp. salt
4 oz. can mushrooms, drained
Diced green pepper, optional

Beat eggs with milk and salt. Stir in other ingredients. Pour into shallow 8 x 8 inch pan. Bake, uncovered, 30 to 45 minutes at 350 degrees, until lightly brown. May be made several hours ahead and refrigerated.
