IRENE'S BROCCOLI CASSEROLE 
1/4 c. finely chopped onion
6 tbsp. butter
2 tbsp. flour
1/2 c. water
1 (8 oz.) jar pasteurized cheese spread
2 (10 oz.) pkg. frozen chopped broccoli, thawed and well drained
2 eggs, well beaten
1/2 c. soda crackers, crumbled

Saute onion in 4 tablespoons butter. Stir in flour, add water. Cook over low heat, stirring until mixture thickens and comes to a boil. Blend in cheese. Combine sauce and broccoli. Add eggs. Mix gently until blended. Put in greased 1 1/2 quart casserole. Cover with crumbs. Dot with remaining butter. Bake at 325 degrees for 30 minutes. Yield: 8 servings.
