SALMON PATTIES 
1 (7 3/4 oz.) can salmon
1/2 c. saltine crackers, crushed
2 tsp. instant minced onion
1 egg
1/3 c. evaporated milk
1 1/2 tbsp. butter

Remove skin and bones from salmon. Flake salmon in liquid. Add cracker crumbs, onions, egg and evaporated milk. Mix well. Shape into 4 balls. Melt butter over low heat in a skillet. Add salmon balls. Cook about 5 minutes on each side.
