OATMEAL PANCAKES 
2 c. buttermilk
2 c. old fashioned Quaker Oats
2 tbsp. sugar
1/2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. salt
2 eggs, stir
1 tbsp. melted butter

Mix buttermilk and oats in bowl and cover with plastic wrap. Let set in refrigerator overnight. Can prepare dry ingredients night before by mixing together. Can leave it out at room temperature overnight.

Next morning add eggs and butter to oatmeal batter. Stir in dry ingredients. Spoon out with 1/4 cup in griddle (greased hot) and flip when ready.

Great alone or with confectionery sugar or with syrup. Kids adore them.
