OATMEAL PANCAKES (NO
CHOLESTEROL)
 
1 1/2 c. Bisquick baking mix
1 c. regular or quick cooking oats
1 2/3 c. skim milk
2 egg whites or 1/4 c. frozen egg product, thawed

Beat all ingredients with wire whisk or hand beater until smooth. Pour scant 1/4 cupful onto hot griddle (grease, if necessary). Cook until edges are dry. Turn; cook until golden brown. About 18 (4 inch) pancakes.

These pancakes are very good! With the oatmeal, they have more rib-sticking power than regular pancake recipes. They were a little heavy; so I added 1/4-1/2 tsp. baking powder. And with any pancake recipe I've found they turn out best if you let the batter rest for a few minutes; then stir again before grilling.
