JAMBALAYA 
2 c. diced leftover ham
3 onions, sliced
1 green pepper, diced
1 garlic clove, minced
1/4 c. butter
1/2 c. dry white wine
3 1/2 c. canned tomatoes
1/2 tsp. thyme
1/4 tsp. basil
1/4 tsp. paprika
1/4 tsp. Tabasco sauce
1 c. rice

Saute onions, green pepper and garlic in butter for 10 minutes. Add ham, wine, tomatoes and seasonings; mix well. Bring to a boil and add rice gradually, stirring constantly. Reduce the heat, cover and simmer for 25 minutes. Serves 6.
