MOOCHIE'S MARKET SALAMEATS 
20 lbs. pork and 10 lbs. beef, ground med.
1/2 oz. salt to 1 lb. meat
1/2 oz. sugar to 1 lb. meat
Enough black pepper to make salt and sugar light grey
1 tsp. cloves (ground)
1 tsp. allspice (ground)
2 tbsp. powdered sugar
1 tbsp. salt peter
1 pt. red wine

Mix all ingredients well. Stuff in beef round casting and tie securely. These are small Italian sausage. They may be boiled or baked and eaten fresh. They may be dried and eaten cured.

I would love to have a true recipe my opinion is that Louie's P&R are good but not that great Mucci's was the best. J L Thornton's at a real good one I live too far away from Herrin to get my fix but nobody is ever going to let off on a recipe if my grandmother was cooking them and I was blind and six blocks away I can find my way home!

Rated 1 because it's wrong. The last place that sold Moochies recipe closed down two years ago, Thornton's Market. Do not like Louie's salameat, begging you to share it with me, memories don't taste as good.

I agree with you! So sad to let this die out. I'm 65 and remember going to Moochiez, with my grandmother. I wish someone would share.

Moochie's were the best. Loui's nor Thornton's compare in my opinion. Have been craving some to the point of attempting to try making my own. Would love to have the recipe. The new mayors of Herrin know nothing of these things. Thank You and God's speed to you Chris.
