FROZEN LEMON PIE 
3 egg yolks (well beaten)
1/4 c. lemon juice
1/2 lemon rind (grated)
1/2 c. plus 1 tbsp. sugar
3 egg whites (beaten stiff)
3/4 c. crushed vanilla wafers
1 c. cream (whipped)
1/8 tsp. salt

Combine egg yolks, lemon juice, lemon rind, salt and sugar. Cook in double boiler until thick. Cool. Fold in whipped cream and egg whites. Line a tray with waxed paper, leaving ends long. Put 1/2 of wafer crumbs in tray. Pour mixture in and put remaining crumbs on top. Freeze.
