TANGY ONIONS | |
4 medium onions 2 tbsp. brown sugar Olive oil Salt and pepper to taste 1/4 c. balsamic vinegar 1/3 c. seasoned bread crumbs 1 tsp. oregano Peel onions and cut a small slice from the top, leaving the root end whole. Cut each onion from the top into 8 wedges, taking care not to cut through the root end. Brush 4 sheets of aluminum foil with olive oil. In a small bowl, mix vinegar, oregano, brown sugar, salt and pepper and rub this mixture on all surfaces of the onions. Wrap each onion in a sheet of aluminum foil. Bake at 350°F for an hour or until tender. In the last 5 minutes of baking, open the foil and sprinkle with the bread crumbs. Note: This dish is easily cooked on the grill. It is a wonderful side dish with any meal, especially if you love onions; they turn out sweet and tart and very mild. |
