1 (8 oz.) can mixed vegetables 1 (8 oz.) can peas 1 small can water chestnuts 3/4 c. Cheddar cheese 3/4 c. mayonnaise 1/2 c. onion 25 to 30 crumbled Ritz crackers (or Hi-Hos) 1/2 stick butter, melted I usually substitute 1 small potato, peeled and sliced. In casserole or meatloaf dish, mix the mixed vegetables, peas, water chestnuts (peeled and sliced potato), Cheddar cheese, mayonnaise and onion together. Crumble 25 to 30 crackers on top. Pour melted butter over crackers. Bake at 350 degrees for 30 minutes. |
