COCONUT CREAM BARS 
2/3 c. brown sugar, packed
2 eggs
1 (3 1/2 oz.) pkg. instant vanilla pudding
1/2 c. butter, softened
1 tsp. vanilla
3/4 c. flour
3/4 c. quick-cooking oats

FROSTING:

2 1/2 c. confectioners' sugar
1/2 c. flaked coconut
1/3 c. butter, softened
2 to 3 tbsp. milk

Heat oven to 350 degrees. In 3-quart bowl, combine brown sugar and butter. Beat on medium speed, scraping sides of bowl often. When light and fluffy, add eggs and vanilla and blend well. Stir in remaining ingredients and blend well about 1 minute. Spread in well-buttered 9-inch pan and bake near center of oven for 17-27 minutes or until toothpick inserted in center comes out clean.

Cool and cut into bars. Beat sugar, confectioners' sugar and milk until smooth and fluffy. Spread on bars and sprinkle with coconut.
