SHERI'S BAKED POTATO AND BACON
CASSEROLE
 
1/2 to 3/4 lb. bacon (I love bacon so I use 3/4 lb.)
6 to 8 potatoes, boiled and mashed very slightly
16 oz. Velveeta Cheese (1/2 block; either shredded or you can cut the block into thin chunks)
salt and pepper, to taste
8 oz. dairy sour cream

Peel potatoes and cut into large chunks then boil. Season with salt and pepper to taste after finished boiling. Cook bacon to crispy texture. Grease a 9x13-inch pan.

Crumble 1/3 of total bacon in bottom of pan. Put a layer of boiled potatoes over bacon. Put a layer of cheese on top on potatoes. Put spoonfuls of dairy sour cream on top of cheese. Repeat layers except leave some cheese to put on the very top 10 minutes before you take it out of the oven.

Bake at 350°F for 30 to 45 minutes.

Should serve 4 to 6.
