ZUCCHINI SOUFFLE 
5-6 c. zucchini, coarsely grated
1 1/2 c. cheddar cheese, grated finely
1 1/2 c. Bisquick
1/2 c. oil
1 tsp. salt
3 eggs, well beaten
1/2 tsp. oregano
1 sm. onion, chopped finely

Mix together. Place in buttered casserole and bake at 350 degrees for 55-60 minutes.
