BAKED CHICKEN BREASTS 
4 chicken breasts, boned and pounded thin
8 whole sun-dried tomatoes
4-6 lg. mushrooms, sliced (or sm. can B&B sliced mushrooms
1/2 c. shredded Mozzarella
Paprika
Garlic powder
Salt and pepper
4 pats butter, melted or soft butter

Preheat oven to 350 degrees. Lay out chicken on waxed paper and sprinkle both sides with garlic powder, salt, and pepper. Place 2 sun-dried tomatoes, 2-3 mushroom slices and approximately 1 heaping teaspoons Mozzarella in the center of each breast. Roll bottom of breast up over filling and overlap top of breast over bottom.

Place each breast, seam side down, in a shallow baking dish sprayed with Pam. Sprinkle tops with paprika and brush with butter. Bake at 350 degrees for 45-50 minutes until golden brown.
