SCALLOPED MACKEREL 
Preheat oven to 375 degrees. Place alternate layers into casserole or 9 x 5 x 3 inch loaf pan:

1 lb. canned macakerel, flaked
2 c. cracker crumbs

Combine in a bowl:

2 eggs, beaten
2 c. hot milk
1 tsp. salt
Dash of pepper
Poultry seasoning
1/4 c. melted butter

Pour over contents of casserole. Sprinkle with parsley or paprika. Bake 40 minutes. Serves 8.
