EMERALD STAR SALAD 
1 (6 oz.) lime Jello
2 c. boiling water
2 c. cold water
1 tsp. gelatin
1 (4 oz.) cream cheese, room temperature
1 (11 oz.) mandarin oranges
1/4 c. chopped walnuts or pecans
1 c. finely chopped celery

Soak gelatin in 1/4 cup cold water 5 minutes. Dissolve Jello powder in boiling water, stir in gelatin until dissolved. Stir in 1 1/4 to 1 1/2 cups water, chill in refrigerator until partially set. Celery may be added. Cream cheese, using a teaspoon to measure. Form cheese balls and roll in nuts. Arrange cheese balls and oranges in partially set Jello. Return to refrigerator to set. Use round mold.
