ABRUZZI STYLE PICKLED GREEN TOMATOES | |
1 qt. green tomatoes (fresh from vine) 1 tbsp. salt 1 clove garlic 1 tbsp. olive oil Distilled water Distilled vinegar (wine or white) Parmesan grated cheese Oregano Place washed green tomatoes into a cleaned glass quart jar. Fill 3/4 full with vinegar. Add crushed clove of garlic, oil, salt and fill jar to the top with distilled water. Seal jar and shake for 1 minute. Leave undisturbed in a cool dark place for at least 3 weeks (cellar shelf). To prepare: Quarter tomatoes and rinse in cold water. Cut in a fresh onion into the strained tomatoes. Add olive oil or your favorite Caesar type salad dressing. Add oregano and grated Parmesan cheese. Stir and serve cold. With olives and cheese makes excellent anti-pasta. |
