RICE-SHRIMP FIESTA | |
1/2 c. cooking oil 2 or 3 tbsp. flour 1 lg. onion, chopped 1/4 tsp. garlic powder 1/4 c. chopped bell pepper 1/4 c. onion 1 lg. can tomato, chopped in blender 3 c. hot, cooked rice 1/2 c. water 2 tbsp. parsley, fresh or flaked 2 c. raw shrimp, cleaned 1 can cream of mushroom soup 1 tsp. salt 1 tsp. seasoned salt 1/2 tsp. black pepper 1/2 tsp. red pepper Heat oil, add flour and stir until golden brown. Add onions, bell pepper, garlic powder, tomatoes and water; cook until onions are tender. Bring to boil, add shrimp, onions, parsley and mushroom soup and cook 6 minutes (longer if shrimp are large). Add hot rice, salt and pepper. Mix thoroughly. |
