HEARTY OATMEAL MUFFINS | |
1 1/2 c. any Aunt Jemima pancake mix 1 c. uncooked Quaker Oats 1/2 c. packed brown sugar 1 1/2 tsp. cinnamon 1 c. milk 1 egg 1/4 c. vegetable oil 1/2 c. peeled, chopped apple 1/3 c. raisins Heat oven to 425 degrees. Grease bottoms only of 12 medium muffin cups or line with paper baking cups. Combine pancake mix, oats, brown sugar and cinnamon. Add remaining ingredients; mix just until dry ingredients are moistened. Fill muffin cups 3/4 full. Bake 15 to 20 minutes or until golden brown. 1 dozen. Hint: If a recipe calls for one cup of whole milk and you out, you can use one cup of skim milk and two tablespoons butter, or 1/2 cup of evaporated milk and 1/2 cup water. |
