HEARTY OATMEAL MUFFINS 
1 1/2 c. any Aunt Jemima pancake mix
1 c. uncooked Quaker oats
1/2 c. packed brown sugar
1 1/2 tsp. cinnamon
1 c. milk
1 egg
1/4 c. vegetable oil
1/2 c. peeled, chopped apple
1/3 c. raisins

Heat oven to 425 degrees. Grease bottoms only of 12 medium muffin pans or use paper cups. Combine dry ingredients, add remaining ingredients and mix just until dry ingredients are moistened. Fill muffin cups 3/4 full. Bake 15 to 20 minutes or until golden brown. Makes 1 dozen.
