OATMEAL MUFFINS 
1 1/2 c. any pancake mix
1 c. uncooked Quaker oats
1/2 c. packed brown sugar
1 1/2 tsp. cinnamon
1 c. milk
1 egg
1/4 c. vegetable oil
1/2 c. peeled, chopped apple
1/3 c. raisins

Heat oven to 425 degrees. Grease bottoms only of 12 medium muffin cups or line with paper baking cups. Combine pancake mix, oats, brown sugar, and cinnamon. Add remaining ingredients; mix just until dry ingredients are moistened. Fill muffin cups 3/4 full. Bake 15-20 minutes or until golden brown.

The Oatmeal Muffin recipe is what I would call an Any Season of the Year Muffin to bake. Toss in any fruit or vegetable of the season and your family will love you for your efforts. Fruits or veggies with a high water content should be dried, diced and tossed in the middle of the batter of each cup before placing muffin pan in the oven.
