OAT BRAN MUFFINS | |
1 1/2 c. Quaker oats 1 c. Quaker oat bran 1/4 c. whole wheat flour 1 tsp. cinnamon 1/4 tsp. nutmeg 1/4 tsp. allspice 1 tsp. baking powder 3/4 tsp. baking soda 1/2 c. brown sugar, firmly packed 1/2 c. buttermilk or skim milk 1 c. applesauce 4 tbsp. vegetable oil 2 beaten egg whites 1/2 c. chopped walnuts 1/2 c. raisins 1/2 c. chopped dates Heat oven to 375 degrees. Spray 12 medium muffin cups with Pam. Combine oats, oat bran, wheat flour, cinnamon, nutmeg, allspice, baking powder, baking soda, and brown sugar. Add buttermilk, applesauce, vegetable oil, and egg whites, stirring well. Add walnuts, raisins, and dates, mixing well. Fill muffin cups almost full. Bake 18 to 20 minutes. |
