LONG JOHN SILVER FISHBATTER | |
2/3 c. beer 1/3 c. lemon juice 1 egg 1/2 c. self-rising flour Salt and pepper to taste Mix all ingredients in a large mixing bowl with wire whisk until batter is smooth. Let it stand at room temperature for 10 minutes. Loosely covered. Moisten 3 pounds of fish fillets in water. Flour each fillet lightly with all-purpose flour. Let pieces dry without touching on a wire rack. One piece at a time dip the floured filets in batter and fry in hot oil. Cook fillets about 4 minutes, turn and cook other side. |
