HURRY-UP SPLIT PEA SOUP 
1 lg. onion, coarsely chopped
1/2 pkg. Jimmy Dean hot sausage
2 1/2 qts. water
1 lb. dried split peas
2 carrots, coarsely chopped
1/2 tsp. salt
2 stalks celery, coarsely chopped
1/4 tsp. thyme or marjoram

Simmer for 40 minutes, then puree with blender. Makes 2 1/2 quarts.
