MY MOM'S CHOCOLATE PIE FILLING | |
9 inch pie crust 1 2/3 c. sugar 2/3 tsp. salt 2 2/3 tbsp. cornstarch 1 1/3 tbsp. flour 2 2/3 c. milk 3 egg yolks 2/3 tbsp. butter 1 1/3 tsp. vanilla 2 2/3 sq. chocolate Mix sugar, salt, cornstarch and flour in the top of a double boiler. Stir in milk. Bring to boil over low heat. Boil for 3 minutes stirring constantly. Remove from heat. Stir a little of hot mixture into the slightly beaten egg yolks and then blend into hot mixture. Place over boiling water and cook for 10 minutes stirring occasionally. Blend in butter and vanilla. Cool thoroughly. Pour into cool baked pie shell. Top with whipped cream or meringue. |
