CHOCOLATE PIE FILLING 
1 c. granulated sugar
2 tbsp. flour
2 tbsp. cocoa
Dash of salt
3 egg yolks (save whites for meringue)
2 c. milk
1 tsp. vanilla
1 tbsp. butter

Thoroughly mix all dry ingredients in medium saucepan. Add egg yolks and about 1/2 cup of the milk, stir until smooth. Add remaining milk, bring to a boil over medium heat, stirring constantly. Boil until mixture thickens, about 2 to 3 minutes. Remove from heat, add vanilla and butter. Stir occasionally until it cools a little. Meanwhile, beat egg yolks until stiff. Add 3 tablespoons sugar, dash of cream of tartar and teaspoon vanilla. Beat a couple of minutes longer. Spread on top of filling that has been poured in baked pie shell. Brown in 325 degree oven.
