3 c. sifted flour
1 tsp. cinnamon
1 tsp. salt
1 (8 oz.) can crushed pineapple with juice
1 1/2 tsp. vanilla
2 c. diced bananas or 4 ripe bananas
1 tsp. baking soda
2 c. sugar
1 1/2 c. oil
3 eggs

Measure dry ingredients and sift flour together. Dice bananas and add to dry ingredients along with the oil, vanilla, eggs, crushed pineapple with juice. The mixture is stirred to blend but not beaten. Pour into greased tube pan. Bake 1 hour and 20 minutes at 350 degrees. Sit to cool on rack in pan.
