1 sweet potato, grated
1 white potato, grated
3 carrots, grated
2 unpeeled apples, grated
1 c. raisins
1/2 c. chopped nuts
1 c. flour
1/2 c. brown sugar
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 stick butter

Mix sweet potato, white potato, carrots, apples, raisins and nuts. Add flour, sugar, baking soda, cinnamon and nutmeg. Melt butter and mix together. Bake, covered in a 375 degree oven for 1 hour. Remove lid and continue baking for about 15 minutes until casserole is browned.
