RICE ORTEGA 
1 onion
1 green or red pepper
4 c. cooked rice
1 sm. jalapeno, minced
1 3/4 c. sour cream
1/2 lb. cottage cheese
1/2 lb. grated cheddar
Salt & pepper
Strips of green chilies

This can be assembled early in day for dinner later. Alternate layers of rice which has been mixed with sauteed onion and green pepper, jalapeno, with strips of green chilies and then a mixture of sour cream, cottage cheese and cheddar. Top should be just cheddar. Bake at 375 degrees for 25 minutes or until bubbly.
