PANIOLO (COWBOY) BAKED BEANS 
1 pkg. (1 lb.) pinto beans
1/2 lb. bacon, diced
1 lg. onion, chopped
2 cloves garlic, minced
3 c. strong coffee
1/2 c. molasses
2 tbsp. ketchup
1 tsp. dry mustard
Salt & pepper to taste

Soak beans overnight; drain. Cook beans, barely covered with water for 45 minutes; drain. In a large stock pot, cook bacon. Add onion and garlic; saute until slightly translucent. Stir in coffee, molasses, ketchup and dry mustard, blend well. Add the cooked beans. Pour into bean pot or casserole and bake at 350 degrees for 3-4 hours, or until tender. Add more coffee if liquid seems to be cooking away. Season to taste with salt and pepper.
