VIDALIA ONION QUICHE | |
Crust: 1 cup cracker crumbs 5 teaspoons butter, melted Combine cracker crumbs and melted butter. Press firmly into a 9 inch pie. Bake at 350°F for 10 minutes. Filling: 2 1/2 cups Vidalia onions, thinly sliced 1 teaspoon olive oil 3/4 cup milk 2 eggs, beaten 1/2 cup Swiss cheese, shredded salt and pepper Sauté onions over medium heat in olive oil until translucent. Spread onions evenly across baked pie crust. Combine milk and eggs; pour over onions. Sprinkle with cheese; season with salt and pepper. Bake at 350°F for 45 minutes. Remove from oven, and cool 10 minutes before serving. Submitted by: CM |
