ANN'S APPLE CAKE 
10 apples, peeled & sliced
1 c. sugar
1 orange rind & juice
1 lemon rind & juice
1/2 c. water

CRUST:

1 1/2 c. matzo meal
1/2 c. potato starch
2 eggs
1 c. sugar
1 c. oil

Mix oil, sugar and eggs; add dry ingredients. Spread less than half of this crust on a greased 8 x 10 inch pan, then add filling and cover with remaining dough. The dough will be soft for top cover. Wet hands and pat on the top of apples. Bake 3/4 hour at 350 degrees.

Filling: Apples peeled and sliced put into a saucepan and add sugar, orange and lemon rind and juice, water; cook until tender. Cool and strain juice off, set aside to cool.
