MOM'S POTATO PANCAKES 
3 c. grated uncooked potatoes
2 eggs, well beaten
1 1/2 tbsp. flour
1/8 tsp. baking powder
1 tsp. salt

Pare potatoes and cover with cold water. Soak several hours before using. Drain well and grate. Rinse to wash out the starch. Add eggs to the grated potatoes and mix lightly. Stir in remaining ingredients. Drop from teaspoon into hot and well greased skillet. Brown on both sides. Makes 12 3-inch pancakes. They taste good with applesauce on the side.
